GBJ Bistro is inspired by the Binyang Fire Dragon Festival in Guangxi.Aritual traditiondatingbackto the Northern Song Dynastyandrecognizedasa National Intangible Cultural Heritage in 20o8,it symbolizes abundance,blessing,and vitality through itseye-dotting ceremony,thunderingdrums,dazzling fireworks,and swirling dragondances.Ourmission is to bring this spiritualsymbolof ourhomeland,alongwithwild-foraged ingredientsand time-honored craftsmanship,tothe tables ofthemodemcity-making tasteavehicle forcultural continuity.
At GBJ Bistro,we adhere to the principle of "Qld Recipes,NewHeritage."Wepreservethetraditionalflavor logicofGuangxi while reinterpretingit through contemporary techniquesand aesthetics—from the tangy, sun-dried bambooshootsandthe briny,citrus-kissed preservedlemonstothedelicatefragranceof Hengzhou jasmine,the fruity heat of multicolored pickled chilies,and thecreamysoftness of Lipu taro.Each ingredient isborn of the landscapeandshapedbylocalwisdomand lived experience.

桂芭蕉的灵感源自广西宾阳炮龙节,这一延续自北宋、并于2008年被列入国家非物质文化遗产的仪式,以点睛开光、锣鼓喧天、烟火连天与群龙共舞,象征丰收、庇佑与生命力。我们希望把这份来自家乡的精神符号,与山野食材与传统手艺一起,带到现代城市的餐桌,让味觉成为文化延续的一部分。
桂芭蕉坚持“老配方,新传承”。我们沿用广西本土传统风味逻辑,却以更当代的技法与美学重新表达一一从酸香干爽的酸笋、带有海风与柑橘气息的咸柠檬、花香清雅的横州茉莉,到酸辣带果香的五彩泡椒、绵糯细腻的荔浦芋头,每一种食材都来自山水,也来自生活经验与地域智慧。
代表菜荔枝木炭烤鸡,经秘制酱料腌制后以果木炭香慢烤,实现皮脆肉嫩、香气四溢;啤酒黄鱼以漓泉啤酒与青椒红焖,酸辣鲜香层次丰富;紫苏热拌牛肉、柠檬鸭、山果椒锅等经典菜品,都以记忆为起点,以创新为表达,让熟悉的味道焕发新的生命。
食材来自大山,味道来自传承,而呈现方式,是属于这一代人的表达。
